Ingredients

• 250 g bananas (equivalent to 2 medium-sized bananas)
• 2 eggs
• 1 tsp vanilla extract
• 100 g oil or melted butter (1/2 cup)
• 160 g flour (1 cup)
• 1.5 tsp baking powder
• 30 blueberries (fresh or frozen)

Instructions

1. In a large bowl, mash the bananas with a fork.
2. Add eggs, vanilla and butter/oil and beat with an electric mixer until smooth and slightly fluffy.
3. Stir in the flour and baking powder and mix for another 30-60 seconds until a uniform dough forms.
4. Pour the dough into an oiled muffin tin. The recipe makes 12 regular or 30 mini muffins.
5. Top the muffins with one or two blueberries.
6. Bake at 180°C (360°F) for 15 minutes. The baking time applies to mini muffins. For regular muffins, bake for about 25-30 minutes.
7. Allow to cool and serve.

• Use ripe or even overripe bananas for natural sweetness.
• Blueberries can be stirred in or just placed on top to minimize mess.
• The muffins can be baked mini or large; adjust the baking time accordingly.
• Store in an airtight container for up to 3 days.
